Salmon Patty Cakes - A Frugal Meal

I got some Quaker Oats for FREE (with coupons & ECBs) at CVS HERE this week. (You can get them for $.50 at Walgreens starting 1/9.) So I've been researching healthy, frugal recipes. I found THIS Dilled Salmon Cakes recipe and wanted to give it a shot.

1 Can Pink Salmon ($1.99 at Aldi)
3/4 Cup Quaker Oats (FREE)
1/3 Cup Skim Milk ($.99/gal at Aldi = $.02)
1 Egg ($.49/dozen at Aldi = $.04)
2 Tsp Chopped Onion ($.05)
1 tsp Dried dill weed ($.05)

I was able to get 6 patties out of this mixture. So...less than $.40 per patty.

We slapped this on a bun (8ct buns discounted to $.20 at Aldi), added some ketchup and pickles, made some french fries (10 lb bag for $.99 at Aldi), and steamed some fresh broccoli (2 crowns discounted to $.60 at Aldi).

Just thought I would share a frugal meal that is also healthy, and a great alternative to your traditional hamburger.

    You could probably utilize the same recipe with just about any canned meat, except you might want to use a different herb than dill if you were doing a meat other than fish. Sounds like it could use a nice vinaigrette or tartar sauce.
