Primal/Paleo Diet: Day 15 of 28 + Week 2 Results

So I started Week 3 of My Paleo Challenge. Yesterday I told you I was going to change my diet a little bit. As I'm reading and researching more about the Paleo Diet, I'm learning new things! I am losing inches around my waist, but I'm not losing as much "weight" as I would like. So I have decided to change my diet to 70-20-10 of fat-protein-carb. The good fat, of course - like olive oil, avocado, nuts, coconut oil, etc.  I'm going to try this for 1-2 weeks and see how it turns out.

Here are my weight loss results for Week 2:
Weight: 0 lbs
Waist: 1/4 inch
Chest: 1 inch
Ribs: 1 inch

Like I said, I'm not seeing any weight loss, but I'm losing inches. My body is re-shaping, and I can tell a difference in certain places. Hopefully changing my percentages to 70-20-10 will boost some weight loss. I've never calculated my grams and percentages, so that will be a bit of a challenge at first. We'll see how it goes.

Here is what I ate today:
Breakfast:
1 Egg, Avocado & Carrots (I only ended up eating 1/2 the carrots)
Lunch:
Chicken Salad with Tomatoes & Homemade Balsamic Vinaigrette  (Sorry for the dark picture)
Dinner:
Grilled Chicken and Veggies (sauteed Zucchini, Squash and Red Bell Pepper in Coconut Oil)

I snacked on some Walnuts and an Orange as well. And that stupid orange put my carb percentage over my goal. Grrr.  Oh well - I'll try again tomorrow. Here is what my spreadsheet said today:

Primal/Paleo Diet: Day 14 of 28

Today marks the end of Week 2 of my 4 Week (28 day) Paleo/Primal Diet. I will weigh myself in the morning and let you know my results tomorrow. I am going to adjust my diet a little bit next week and see if I have better "weight loss" results, but I will share that with you tomorrow. Here is what I ate today:
Breakfast:
Leftover Beef Stew (I snacked on this through out the whole day...yum!)
Lunch:
My grandma cooked lunch for the family. I had chicken, sausage and veggies with a side salad. And yes, I resisted the mac n cheese, texas toast, banana pudding and pie.

Dinner:
Because I had been snacking on the soup through out the day, I didn't eat dinner.

On to Week 3!

Primal/Paleo Diet: Day 13 of 28

Here is what I ate today:

Breakfast:
I was not very hungry so I only ate 8 almonds and 5 strawberries.
Lunch:
Beef Stew and a Side Salad.
Dinner:
Brian's Aunt was in town so she took the family out for Mexican...and I had a chicken salad. I ate 1/2 there and here are my leftovers!  (I was a HUGE salad!)

Easy Paleo Beef Stew

I love making soups and stews. They are so versatile, quick and easy, use only 1 pot and you don't have to measure anything!

We had some leftover steak that I wanted to throw in a stew. So I basically just threw a bunch of vegetables in a crock pot, set it on high for a few hours...and came out with a tasty meal!

Easy Paleo Beef Stew (serves 4)

Ingredients: *Note: I didn't really measure, so I'll put a roundabout #.*
1 lb Steak / Beef
3 cups Beef Broth or Stock
1 Onion, chopped
2 Celery stalks, chopped
2 Carrots, chopped
1 Sweet Potato or 1/2 Butternut Squash (optional) *I used a sweet potato*
1/2 can Diced Tomatoes
1 spoonful minced Garlic
2-3 Tbsp Coconut Aminos (a Soy Sauce substitute)
Avocado (optional)
1 Tbsp Italian seasoning (optional)
2-3 Tbsp Coconut Flour (optional)
Sea salt and Pepper to taste

All I literally did was throw some meat and veggies in beef broth in the crockpot for a few hours. I added the coconut flour to thicken it up a little bit, but you can easily omit that. My husband and I don't like a lot of tomato in our stews, so I only put in 1/2 a can. But of course you can put in the whole can. We also had a handful of leftover green beans, so I threw those in as well. Like I said, you can throw anything you want in there! It's so easy to make!
